Chef Dean Schmitz, formerly with Andrews in the Delafield Hotel, earned a 3.5 star rating from Dennis Getto, restaurant critic for the Milwaukee Journal Sentinel. As Head Chef at the Black Trumpet, he earned a 3 star rating from the paper's dining critic, Carol Deptolla. In February of 2011 his talent was awarded a 3 1/2 star rating from Carol Deptolla for his work at Timmer's Resort.  Dean's cooking philosophy is to use locally grown ingredients as much as possible and classic techniques with a modern flare and bold flavors. He brings more than 30 years of experience and passion to Timmer's.
